Almond Crusted Chicken

Almond crusted chicken is one of my go-to recipe for a quick and healthy dinner. Total prep and cooking time is about 30 minutes.

Almond Crusted Chicken

1-2 cups of almonds

1/2 lb. chicken breast cut into strips or chicken tenders

1/2 cup honey

1/3 cup dijon mustard

parsley

salt

pepper

ginger (optional)

Preheat oven to 400

1. pulse almonds in food processor or with hand held blender until almonds are finely chopped but not a smooth powder. toss with parsley and salt and pepper to taste. spread on plate.

2. mix honey, dijon mustard and ginger in a small bowl.

3. bathe chicken strips in honey and mustard mix then roll in almonds. place in greased baking dish.

4. bake for 25 minutes at 400. Add more time if strips of chicken are thicker.

mix up more honey and mustard for a dipping sauce if desired
